No, passports are no longer stamped at either HK or Macau border control points. See FAQ 2 under “Non-Stamping Immigration Clearance Arrangement for Visitors” - you can request a travel record statement from HK Immigration Dept but not a passport stamp;

If you check-in online and get your boarding pass electronically, and you skip the airport kiosk and check-in counter and proceed directly to the gate, you WILL need to approach the gate ahead of boarding to present your passport, assuming it's an international .
