It's a pity that you couldn't find the original Excel file. Modifying it and then exporting it to a new PDF would have been the simplest way.
2022年4月25日 · But the edit is indeed there since I can open the PDF file in another editor like Foxit PDF Editor online and can see the Chinese text I had entered previously in Edge (but where Edge was not showing or displaying the font chars for some strange reason).

2022年2月24日 · AtlanticOCEAN！. Created on February 24, 2022. After adding text to PDF using Microsoft Edge, I cannot see what I've written. I can using add text properly as the picture above shows, but when I click other parts of the pdf, this textbox disappears, and I can't see it. However, if I click at the blank it used to be located, it appears again.
