I think we could. Every English teacher I've ever known would mark this wrong. At the least, there needs to be a comma between "bright" and "beautiful."

The sun shines or is shining because it gives off its own light. So technically the sun is not shiny. However, I have heard people say it and it would not sound bad. "The sun is so shiny today!"
