The reason for this is to test not only your ability to work with customers and not offended them, but to also show your ability to sell and show customers alternative items that would be right for certain events.
I think "next Wednesday" simply means the one immediately upcoming from the current point in time. Ie. from today (Sunday 10th June) that'd be Wednesday 13th June. "This Wednesday" would simply mean the one this week, if it's not Wednesday yet. If talking of the one after the upcoming (20th June), the term "Wednesday after next" should be used.
