The plan is to go straight from Odawara to Owakudani first, then Open Air Museum, then the ryokan. My husband absolutely refuses to do the Hakone Ropeway.

If you indeed meant Nagano (to the north of Tokyo), you will be going in the opposite direction from Ise.In that case, the proper order would be Tokyo - Nagano - Kanazawa (add if you can spare two days) - Osaka (Koyasan) - Ise via Nagoya - Okinawa (flight from Nagoya). ...
