鰻魚的命名與蒲燒的由來. ©pocketalbum / PIXTA. 日本最早有關鰻魚的文字記載出現於奈良時代（710年∼794年〉的詩歌總集《萬葉集》，歌人（日本傳統詩歌的創作者） 大伴家持 的詩中曾有一段提及鰻魚的話「告訴石麻呂，在夏天想要瘦的話就要吃鰻魚（石麻呂に 吾れもの申す 夏痩せに よしといふものぞ 鰻とり食せ）」，說明了那個時候開始，人們就知道鰻魚有著強壯身體，滋陰補陽的功效。 當時形狀像蛇一樣的生物都稱做為「むなぎ」，再者由於鰻魚身形似建築物的「棟木（むなぎ）」，因此鰻魚被寫作「武奈伎（むなぎ）」，直到12世紀才被稱為「鰻（うなぎ）」。 此外，鰻魚的血液帶有些許毒素，容易引發腹瀉，如果碰到眼睛也容易引發結膜炎，所以不適合生吃。
