We have tickets to fly into Tokyo and hope to visit Kanazawa, kamikochi, Fuji, shirazawa etc. Our family dynamics is 2 kids aged 5 and 2. We love to hike whenever we travel.

Nagoya has a castle but it is rebuilt, not original and w/elevator. You might consider going to Ise city where not too many foreign tourists visit yet. You can do this in a day trip from Nagoya. You can also visit the Iseshima, Ago pearl bay, etc. You will see the largest refinery complex in Japan on the way.
Sakae is a busy downtown shopping area and is worth a walk around at the least. There's plenty of high-end shopping if that's what you're looking for (Louis Vuitton, Miu Miu, Apple, etc.), but also plenty of average-cost shops like Uniqlo. This is also the stop for the city's Central Park and Nagoya TV Tower.
