I use French, English and Chinese regularly, and I've changed the default keyboard layout for English from QWERTY to AZERTY as shown below: But, when I try to do that with Chinese, the option doesn't show up, and the default layout is QWERTY, which I can't change.

Uncheck the Auto-Keyboard switching check box. I would also recommend you to post your query in Office forums if the issue is with office applications.
In the Cortana box type 'Region'. Click on 'Region and Language Settings'. Click on 'Add a Language'. From the list of languages select Chinese Simplified. Select Chinese (Simplified, China). Click on Language pack available. Click on Options button. I did see Chinese (Simplified, China) Microsoft Pinyin when clicking to select language.
2019年10月31日 · Hi! I desperately need to type traditional Chinese with hanyu pinyin (not bopomofo) keyboard. Previously, I had no problem at all (with older version of Windows), but it seems that this function no longer working in Windows 10. I installed the Chinese (Traditional, Taiwan) language pack and downloaded all Traditional Chinese IME required.

2018年1月18日 · Probably a bit late, but for anyone in the future, here's an imperfect workaround. You can use the traditional Chinese language for the bopomofo keyboard and use the simplified chinese language for pinyin input. Then select traditional chinese as the output for both layouts. You can use the keys windows+space to switch between languages.
