only CX holidays and zuji and other expensive international travel sites you can *truly* book online. The others you have to pay and/or pick up the tickets/vouchers in person. But in return you get cheaper pricing.
Are you looking at CX Holidays packages departing from HKG? I have bought their packages previously and could choose to stay at the package hotel towards the start or the end of the journey. But you will have to call them up or go to an agent to buy anyway because you can't purchase it that way on CX's website.
