2022年7月22日 · GI白山. 產地：石川縣白山市 ／ 指定日期：2005年12月 ／ 分類：清酒. 自古至今，日本清酒是從祈禱神明、祭拜祖先等各種婚喪喜慶中不可或缺的飲品，然而至2022年4月為止，獲得日本地理標誌認證的產地卻只有13個。 第一個獲得認證的日本清酒來自石川縣白山市，取用靈峰白山流至手取川的高鈣低鉀地下水，以及日本國產米・米麴或一級以上的釀造用糙米，以70%以下的精米比率進行發酵，所形成的白山清酒擁有濃郁醇厚特質的米香，而純米吟釀酒和吟釀酒也因具有溫和的果香和恰到好處的酸味，深受喜愛。 此外，為了延續傳統製法「山廢預處理 （山廃仕込み）」，同時維護當地清酒的特性和品質，GI白山更制定了嚴格的釀酒規範，透過當地5家釀酒廠的努力，於2005年也推出有象徵當地品牌的清酒「白山菊酒 」。
